The Whole Hog Deli is launching a major project centered on the unique Scented Lemon of Tripura in a strategic move to champion regional agricultural excellence and boost international trade.
Under the leadership of entrepreneur Saurav Gupta, this initiative by M/s. Sublime Gourmet seeks to modernize traditional food systems and build dependable commercial avenues for rural cultivators and cooperative groups.
While the organization previously gained acclaim for its work in preserving Bandel Cheese—a culinary relic dating back four centuries—it is now shifting its primary focus toward the citrus groves of Northeast India.
This transition represents a broader commitment to elevating India’s diverse food heritage through professional market integration.
The Scented Lemon of Tripura is the cornerstone of this new phase, prized for its intense fragrance and high concentration of essential oils.
The project aims to incorporate Tripura’s farmers and Farmer Producer Companies into a sophisticated supply network.
By creating these direct links, the initiative connects local growers with top-tier retailers, the luxury hospitality industry, and international shipping channels.
To ensure the success of this venture, the company has secured the backing of influential industry figures.
Renowned culinary experts such as Chef Ranveer Brar, Chef Vikas Khanna, and Chef Sanjeev Kapoor, alongside hospitality leaders like AD Singh and Riyaaz Amlani, are lending their support.
These partnerships are further bolstered by distribution agreements with major global platforms, including Lulu Group International, Spencer’s Retail, and Nature’s Basket.
A critical component of the plan involves the construction of an industrial facility dedicated to extracting essential oils from the lemon’s rind.
The facility will also handle the processing of zest for commercial sale. This infrastructure is designed to maximize the value of every harvest, significantly increasing the earnings of local farmers while reducing waste and creating new employment opportunities within Tripura.
Saurav Gupta highlights that the specific aromatic qualities of this lemon give it a distinct advantage in the global marketplace.

He believes the fruit has the potential to become a preferred alternative to the Kaffir Lime, which is currently a staple in international cooking and food manufacturing.
